Pork steaks.  A few years back I would have frowned at that.  I was much more familiar with other pork products: chops, roasts and ribs.  Now, however, I find myself leaning towards pork ribeyes more and more.  It doesn’t hurt that Katie likes them as well.

I tried out a new rub on the ribeyes we made last night.  Well, more like I completely made it up when it came time cook them.  The last time I made pork steaks I had used my garlic rib run on them (more on that later).  It just so happened that I was out so I improvised.

The resulting steaks turned out pretty okay so I’ll share the rub recipe:

  • 1 tbs brown sugar
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • 1 tsp ground black pepper
  • 1 tsp garlic salt
  • 1/2 tsp ground oregano
  • 1/2 tsp ground mustard
